This has gone to be one of my favourite soups this year, its healthy, nutritious and super tasty! Its one of those recipes that warms your soul, it doesn’t get too cold here in Dubai but the AC can chill your bones sometimes and thats when I love a good soup! I love to make a big batch of soup and freeze it for later.

Lentils have huge health benefits such as lowering cholesterol, stabilizes blood sugar, is a good source of protein and is good at increasing energy levels.

Fresh chilli peppers, red and green, are rich source of vitamin-C, Chilies contain a good amount of minerals like potassium, manganese, iron, and magnesium.

 

Recipe – Spicy Moroccan Red Lentil and Coconut Soup


Ingredients

*  2 carrotts, chopped

*  1 small onion

*  3/4 garlic cloves, minced

*  1 tsp cumin

*  1 tsp tumeric

*  2 tsp coriander

*  1 tsp paprika

*  1/4 tsp cinnamon

* 1 small red birds eye chilli

*  2 cups lentils, rinsed

*  6 cups vegetable stock

*  1 can chopped tomatoes

*  2-3 tbsp tomato paste

*  1/2 – 1 cup of coconut milk – to taste

*  Salt and pepper

To Garnish

*  lemon

*  Fresh coriander

*  dried chilli flakes and whole cumin toasted


How to

Saute onion, garlis, carrots with olive oil until soft.

Add spices and continue for 3-4 minutes.

Add lentils and vegetable stock and simmer for 8-10 minutes.

Add tin of chopped tomatoes, tomato paste and coconut milk and simmer for 30 minutes.

Puree in the blender small batches at a time.

Serve warm with garnish of lemon wedges, fresh coriander sprigs and toasted chilli flakes/cumim.
